Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until soft.
  3. Add fresh spinach and cook until wilted.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in heavy cream, and season with salt and pepper to taste. Heat through before serving.
