Split Pea Soup

- 1 lb dried split peas rinsed and sorted
- 1 ham hock
- 1 large onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. In a large pot, combine the split peas, ham hock, onion, garlic, carrots, celery, chicken broth, and dried thyme.
2. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until peas are tender.
3. Remove the ham hock, chop the meat, and return it to the pot. Discard the bone.
4. Season with salt and pepper to taste. Serve hot.
