Ingredients 

Main Ingredients

  • 1 medium butternut squash peeled and diced
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado sliced
  • ¼ cup chopped cilantro
  • 1 lime cut into wedges

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss squash with olive oil, cumin, chili powder, salt, and pepper. Spread on a baking sheet.
  3. Roast squash for 20 minutes or until tender.
  4. Warm tortillas in a skillet over medium heat.
  5. Fill tortillas with roasted squash, black beans, avocado slices, and cilantro.
  6. Serve with lime wedges.
