Ingredients

  • 1 cup Farro uncooked
  • 2 cups Butternut squash peeled and cubed
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Arugula
  • ½ cup Feta cheese crumbled
  • ¼ cup Pumpkin seeds toasted

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Cook farro according to package instructions. Drain and let cool.
  4. In a large bowl, combine cooked farro, roasted squash, arugula, feta cheese, and pumpkin seeds. Toss gently to mix.
  5. Serve immediately or chill for later.
