Ingredients 

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoon butter
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook the macaroni according to package instructions.
  3. Steam or boil the butternut squash until tender, then mash.
  4. In a large pot, melt the butter and stir in the mashed squash, milk, and cheddar cheese until smooth.
  5. Add the cooked macaroni to the pot and mix well.
  6. Transfer the mixture to a baking dish, sprinkle with Parmesan cheese.
  7. Bake for 20 minutes or until the top is golden and bubbly.
