Instructions
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add potatoes and cook until golden brown, about 10 minutes.
Add onions, bell peppers, and garlic. Cook until softened, about 5 minutes.
Add steak and cook until heated through, about 3 minutes.
Push hash to the side of the skillet and add remaining olive oil.
Crack eggs into the skillet and cook to desired doneness.
Season with salt and pepper.
Serve hot, garnished with fresh parsley if desired.
