Ingredients 

Shortcake

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • cup whole milk

Topping

  • 1 lb fresh strawberries, hulled and sliced
  • 2 tablespoon granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gradually add milk, stirring until just combined. Do not overmix.
  4. Drop dough by spoonfuls onto the prepared baking sheet. Bake for 12-15 minutes or until golden brown. Cool on a wire rack.
  5. In a bowl, toss strawberries with 2 tablespoons of sugar. Let stand for 10 minutes.
  6. In another bowl, whip the cream with vanilla extract until soft peaks form.
  7. Split shortcakes in half. Spoon strawberries and whipped cream over the bottom halves, then replace the tops. Serve immediately.
