- 4 zucchini medium-sized
- 1 lb ground meat beef, turkey, or chicken
- 1 onion chopped
- 2 cloves garlic minced
- 1 cup tomato sauce
- 1 cup shredded cheese mozzarella or cheddar
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 375°F (190°C).
Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
In a pan, cook the ground meat until browned. Add chopped onion and minced garlic, and cook until softened.
Stir in the tomato sauce, salt, and pepper. Let it simmer for a few minutes.
Fill the zucchini boats with the meat mixture and place them in a baking dish.
Top with shredded cheese and bake for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
