Ingredients

  • 4 zucchini medium-sized
  • 1 lb ground meat beef, turkey, or chicken
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese mozzarella or cheddar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
  3. In a pan, cook the ground meat until browned. Add chopped onion and minced garlic, and cook until softened.
  4. Stir in the tomato sauce, salt, and pepper. Let it simmer for a few minutes.
  5. Fill the zucchini boats with the meat mixture and place them in a baking dish.
  6. Top with shredded cheese and bake for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
