Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 cups grated summer squash
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, mix grated summer squash, oil, eggs, and vanilla extract.
Combine wet and dry ingredients until just blended. Pour into prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
