Ingredients

  • 2 cups grated summer squash
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg beaten
  • ½ cup milk
  • ¼ cup grated Parmesan cheese

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, combine the grated summer squash, flour, baking powder, salt, and black pepper.
  3. In a separate bowl, beat the egg and then add the milk. Mix well.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the grated Parmesan cheese.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 18-20 minutes, or until the puffs are golden brown and cooked through. Serve warm.
