Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups summer squash, sliced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add summer squash and cook for 5 minutes.
  4. Pour in vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend until smooth, season with salt and pepper.
  7. Garnish with fresh basil before serving.
