Sunnyside Burger with Chipotle Aioli

Burger Ingredients
- 1 lb Ground Beef
- 4 Burger Buns
- 4 Eggs
- 4 slices Cheddar Cheese
- 1 tablespoon Olive Oil
Chipotle Aioli Ingredients
- ½ cup Mayonnaise
- 1 tablespoon Chipotle Peppers in Adobo Sauce finely chopped
- 1 teaspoon Lime Juice
- 1 clove Garlic minced
1. In a mixing bowl, combine ground beef with salt and pepper. Form into 4 patties.
2. Heat a skillet over medium-high heat and add olive oil. Cook the patties for about 4-5 minutes on each side or until desired doneness. Add cheese slices on top of each patty in the last minute of cooking.
3. In the same skillet, cook the eggs sunny-side up.
4. In a small bowl, mix together mayonnaise, chipotle peppers, lime juice, and garlic to make the chipotle aioli.
5. Toast the burger buns in the skillet until golden brown.
6. Assemble the burgers by spreading chipotle aioli on the bottom bun, adding the beef patty with cheese, topping with a sunny-side-up egg, and finishing with the top bun.
