Ingredients 

Main Ingredients

  • 500 g Chicken breast, cut into bite-sized pieces
  • 1 Red bell pepper, chopped
  • 1 Green bell pepper, chopped
  • 1 Onion, chopped
  • 2 tablespoon Vegetable oil

Sauce Ingredients

  • ½ cup Ketchup
  • ¼ cup Rice vinegar
  • ¼ cup Brown sugar
  • 2 tablespoon Soy sauce
  • 1 tablespoon Cornstarch mixed with 2 tablespoon water

Instructions 

  1. 1. Heat the vegetable oil in a wok over medium-high heat.
  2. 2. Add the chicken pieces and stir-fry until cooked through. Remove and set aside.
  3. 3. In the same wok, add the bell peppers and onion. Stir-fry until tender.
  4. 4. In a mixing bowl, whisk together the ketchup, rice vinegar, brown sugar, and soy sauce.
  5. 5. Pour the sauce into the wok and bring to a simmer.
  6. 6. Add the cornstarch mixture and stir until the sauce thickens.
  7. 7. Return the chicken to the wok and toss to coat in the sauce.
  8. 8. Serve hot over rice.
