Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and diced
  • 1 can Black Beans drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 4 large Tortillas
  • 1 cup Shredded Cheese
  • 1 cup Salsa

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, cumin, chili powder, and salt. Spread on a baking sheet and roast for 25-30 minutes, until tender.
  3. In a mixing bowl, combine roasted sweet potatoes and black beans.
  4. Heat tortillas in a skillet or microwave until warm.
  5. Fill each tortilla with the sweet potato and black bean mixture, top with shredded cheese and salsa. Roll up and serve.
