Ingredients

  • 1 cup Mashed Sweet Potatoes cooked and mashed
  • ½ cup Vegetable Oil
  • 1 cup Sugar
  • 2 Eggs beaten
  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • ½ tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix together the mashed sweet potatoes, vegetable oil, and sugar until well combined.
  3. Add the beaten eggs to the sweet potato mixture and mix well.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
