Sweet Potato Nachos Recipe

- 2 large sweet potatoes sliced into rounds
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 cup black beans drained and rinsed
- 1 cup shredded cheese
- ½ cup sliced jalapeños
- ¼ cup cilantro chopped
- 1 cup salsa
- ½ cup sour cream
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, toss the sweet potato rounds with olive oil, paprika, and garlic powder until evenly coated.
Spread the sweet potato rounds in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping halfway through, until crispy and golden.
Remove the sweet potatoes from the oven and top with black beans, shredded cheese, and jalapeños. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
Remove from the oven and sprinkle with chopped cilantro. Serve with salsa and sour cream on the side.
