Pie Filling
- 2 cups mashed sweet potatoes
- 1 cup sugar
- ½ cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 cup milk
- 1 9-inch unbaked pie crust
Preheat oven to 350°F (175°C).
In a mixing bowl, combine mashed sweet potatoes, sugar, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix well.
Gradually stir in milk until the mixture is smooth.
Pour the filling into the unbaked pie crust.
Bake in the preheated oven for 55-60 minutes, or until a knife inserted into the center comes out clean.
Allow the pie to cool before serving.
