Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 large russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 2 tablespoon fresh parsley chopped

Instructions 

  1. 1. Boil the sweet potatoes and russet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and fresh parsley to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
