Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 8 small tortillas

Toppings

  • 1 cup black beans cooked
  • 1 cup corn cooked
  • ½ cup sour cream
  • ¼ cup cilantro chopped
  • 1 medium avocado sliced

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, chili powder, cumin, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 25 minutes, or until tender.
  4. Warm tortillas in a skillet over medium heat.
  5. Assemble tacos by adding roasted sweet potatoes, black beans, corn, sour cream, cilantro, and avocado slices to each tortilla.
