Ingredients

  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 2 cups Cheddar Cheese shredded
  • 1 bag Tater Tots

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain the fat.
  3. Add the taco seasoning and water according to the package instructions. Simmer until thickened.
  4. In a baking dish, layer the beef mixture, black beans, corn, and 1 cup of cheese.
  5. Top with an even layer of tater tots.
  6. Bake for 30-35 minutes or until the tater tots are golden brown and crispy.
  7. Sprinkle the remaining cheese on top and bake for an additional 5 minutes or until the cheese is melted.
