Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1-2 tablespoon red curry paste
  • 400 ml coconut milk
  • 500 ml chicken broth
  • 2 chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions 

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until softened.
  2. Stir in red curry paste and cook for another minute.
  3. Pour in coconut milk and chicken broth. Bring to a simmer.
  4. Add chicken, bell pepper, and mushrooms. Cook until chicken is cooked through.
  5. Stir in fish sauce and lime juice. Adjust seasoning if needed.
  6. Serve hot, garnished with cilantro and lime wedges.
