Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 cup Sliced mushrooms
  • 1 tablespoon Red curry paste
  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Shredded chicken Cooked
  • 1 cup Cherry tomatoes Halved
  • 1 tablespoon Lime juice
  • 1 handful Cilantro Chopped

Instructions 

  1. Heat the oil in a pot over medium heat. Add the mushrooms and cook until softened, about 5 minutes.
  2. Add the red curry paste and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
  4. Stir in the coconut milk, fish sauce, and brown sugar. Add the shredded chicken and cherry tomatoes. Simmer for another 5 minutes.
  5. Remove from heat and stir in the lime juice and cilantro. Serve hot.
