  • 2 cucumbers sliced thin
  • ¼ cup red onion sliced thin
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon sesame oil
  • 1 tablespoon chopped peanuts for garnish
  • 1 tablespoon chopped cilantro for garnish

Instructions 

  1. In a mixing bowl, combine the cucumbers and red onion.
  2. In a small bowl, whisk together the rice vinegar, sugar, salt, and sesame oil until the sugar is dissolved.
  3. Pour the dressing over the cucumber mixture and toss to coat.
  4. Garnish with chopped peanuts and cilantro before serving.
