Ingredients 

Main Ingredients

  • 2 tablespoon Green curry paste
  • 400 ml Coconut milk
  • 500 g Chicken breast, sliced
  • 1 cup Mixed vegetables (bell peppers, carrots, zucchini)
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 handful Fresh basil leaves

Instructions 

  1. 1. Heat the large pot over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
  2. 2. Pour in the coconut milk and bring to a simmer.
  3. 3. Add the sliced chicken breast and cook for 5-7 minutes until the chicken is cooked through.
  4. 4. Add the mixed vegetables and cook for another 5 minutes until they are tender.
  5. 5. Stir in the fish sauce and brown sugar. Adjust seasoning to taste.
  6. 6. Remove from heat and stir in the fresh basil leaves. Serve hot with steamed rice.
