Ingredients 

Salad Ingredients

  • 200 g rice noodles
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 red chili, finely chopped optional

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. 2. In a large mixing bowl, combine the cooked noodles, red bell pepper, carrot, cucumber, cilantro, and mint.
  3. 3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, brown sugar, sesame oil, and red chili (if using).
  4. 4. Pour the dressing over the salad and toss to combine. Serve immediately or chill for 30 minutes before serving.
