Ingredients

  • 1 can Green beans drained and rinsed
  • 1 can Kidney beans drained and rinsed
  • 1 can Chickpeas drained and rinsed
  • ½ cup Red onion chopped
  • ¼ cup Parsley chopped
  • ¼ cup Olive oil
  • ¼ cup Red wine vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine the green beans, kidney beans, chickpeas, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat.
  4. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
