Tomato Gazpacho Recipe

Main Ingredients
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 cups tomato juice
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Combine tomatoes, cucumber, bell pepper, onion, and garlic in a blender.
Add tomato juice, olive oil, and red wine vinegar.
Blend until smooth.
Season with salt and pepper.
Chill in the refrigerator for at least 2 hours.
Serve cold, garnished with fresh basil.
