Instructions
Heat olive oil in a pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add canned tomatoes, vegetable broth, salt, pepper, and sugar. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender.
Return the soup to the pot, stir in heavy cream, and heat through.
Serve hot.
