Ingredients 

Main Ingredients

  • 1 lb ground turkey
  • 1 cup frozen mixed vegetables
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mashed potatoes
  • 1 cup chicken broth
  • 2 tablespoon olive oil
  • to taste Salt and pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cook until softened.
  3. Add ground turkey, cook until browned. Season with salt, pepper, thyme, and rosemary.
  4. Stir in frozen mixed vegetables and chicken broth. Simmer for 5 minutes.
  5. Transfer turkey mixture to a baking dish. Spread mashed potatoes evenly on top.
  6. Bake in preheated oven for 20 minutes or until the top is golden brown.
