Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 lb chicken breast cut into bite-sized pieces
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes chopped
  • 1 cup Parmesan cheese grated
  • 2 cups baby spinach
  • 1 lb pasta cooked according to package instructions
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
  2. Add garlic and cook for another minute.
  3. Pour in heavy cream and chicken broth. Bring to a simmer.
  4. Stir in sun-dried tomatoes and Parmesan cheese. Cook until the sauce thickens.
  5. Add spinach and cooked pasta. Toss to combine. Season with salt and pepper to taste.
