Tuscan Chicken Pasta

Main Ingredients
- 2 tablespoon olive oil
- 1 lb chicken breast cut into bite-sized pieces
- 3 cloves garlic minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes chopped
- 1 cup Parmesan cheese grated
- 2 cups baby spinach
- 1 lb pasta cooked according to package instructions

Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
Add garlic and cook for another minute.
Pour in heavy cream and chicken broth. Bring to a simmer.
Stir in sun-dried tomatoes and Parmesan cheese. Cook until the sauce thickens.
Add spinach and cooked pasta. Toss to combine. Season with salt and pepper to taste.
