Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cans cannellini beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 2 cups kale, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the cannellini beans, dried thyme, dried rosemary, salt, and black pepper. Reduce heat and simmer for 20 minutes.
  6. Stir in the chopped kale and cook for another 5 minutes, until the kale is wilted.
  7. Serve hot and enjoy!
