Tuscan White Bean Soup

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cans cannellini beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
- 2 cups kale, chopped
Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil.
Add the cannellini beans, dried thyme, dried rosemary, salt, and black pepper. Reduce heat and simmer for 20 minutes.
Stir in the chopped kale and cook for another 5 minutes, until the kale is wilted.
Serve hot and enjoy!
