Ingredients 

Main Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup blueberries
  • ½ cup almond milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon

Instructions 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix mashed bananas, almond milk, maple syrup, and vanilla extract.
  3. In another bowl, combine oats, baking powder, baking soda, salt, and cinnamon.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
