Ingredients 

Main Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup vegan butter softened
  • ¾ cup brown sugar packed
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoon ground flaxseed mixed with 6 tablespoon water
  • 3 cups rolled oats
  • 1 cup raisins

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream together the vegan butter, brown sugar, and granulated sugar until smooth. Add the vanilla extract and flaxseed mixture, and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the rolled oats and raisins.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
