Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 1 can Diced tomatoes 14.5 oz can
  • 6 cups Beef broth
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried basil

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat until fully cooked.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Pour in the beef broth and diced tomatoes. Stir well.
  4. 4. Add the carrots, potatoes, and celery. Bring the mixture to a boil.
  5. 5. Reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender.
  6. 6. Season with salt, black pepper, dried thyme, and dried basil. Stir well and let it simmer for another 5 minutes.
  7. 7. Serve hot and enjoy!
