Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add minced garlic and cook until fragrant, about 1 minute.
  3. 3. Add chickpeas, cumin, and paprika. Cook for 5-7 minutes, stirring occasionally.
  4. 4. In a mixing bowl, combine cherry tomatoes, cucumber, bell pepper, lemon juice, salt, and black pepper.
  5. 5. Serve the chickpea mixture over the vegetable mix.
