Ingredients

  • 1 cup Couscous
  • 1 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 1 cup Chopped vegetables (bell peppers, zucchini, carrots)
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Bring the vegetable broth to a boil in a saucepan.
  2. 2. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. 3. In a separate pan, heat olive oil over medium heat. Add chopped vegetables and sauté until tender.
  4. 4. Fluff the couscous with a fork and add it to the pan with the vegetables. Mix well.
  5. 5. Season with salt and black pepper. Serve warm.
