Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Remove from heat and stir in the couscous. Cover and let sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and transfer to a large mixing bowl.
  3. 3. Add the cherry tomatoes, cucumber, red bell pepper, red onion, and parsley to the bowl.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
