Ingredients

  • 2 large eggplants sliced
  • 2 large zucchinis sliced
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups tomato sauce
  • 1 cup grated cheese
  • 1 cup breadcrumbs
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Slice the eggplants and zucchinis, then sprinkle with salt and let sit for 10 minutes to draw out moisture. Pat dry.
  3. 3. In a frying pan, heat olive oil over medium heat. Sauté the onion and garlic until soft.
  4. 4. Add the tomato sauce to the pan, season with salt and pepper, and let simmer for 10 minutes.
  5. 5. In a baking dish, layer the eggplant slices, zucchini slices, and tomato sauce mixture. Repeat layers until all ingredients are used up.
  6. 6. Top with grated cheese and breadcrumbs.
  7. 7. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the vegetables are tender.
  8. 8. Let cool for a few minutes before serving. Enjoy!
