Ingredients 

Main Ingredients

  • 2 cups Mixed Vegetables (carrots, peas, corn)
  • 1 cup Potatoes, diced
  • ¼ cup Butter
  • ¼ cup All-purpose Flour
  • 2 cups Vegetable Broth
  • 1 cup Milk
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 package Pie Crust

Instructions 

  1. 1. Preheat oven to 425°F (220°C).
  2. 2. In a large pot, melt butter over medium heat. Add flour and stir until well combined.
  3. 3. Gradually whisk in vegetable broth and milk. Cook until the mixture thickens.
  4. 4. Add mixed vegetables and potatoes. Season with salt and pepper. Cook for 5-7 minutes.
  5. 5. Pour vegetable mixture into a pie dish. Cover with pie crust, sealing the edges.
  6. 6. Cut slits in the top of the crust to allow steam to escape.
  7. 7. Bake for 30-35 minutes, or until the crust is golden brown.
  8. 8. Let cool for a few minutes before serving.
