Ingredients 

Main Ingredients

  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 cup Green Beans, chopped
  • 1 cup Corn
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. Heat a large pot over medium heat and add a bit of oil.
  2. 2. Add the onions, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Pour in the vegetable broth and diced tomatoes.
  5. 5. Add the green beans, corn, salt, pepper, and thyme. Bring to a boil.
  6. 6. Reduce heat and let it simmer for 20 minutes.
  7. 7. Serve hot and enjoy!
