Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 medium Bell Pepper, chopped
  • 1 medium Carrot, chopped
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 can Black Beans (15 oz, drained and rinsed)
  • 1 can Kidney Beans (15 oz, drained and rinsed)
  • 1 cup Vegetable Broth
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, bell pepper, and carrot. Cook until vegetables are tender, about 5-7 minutes.
  3. Add diced tomatoes, black beans, kidney beans, and vegetable broth. Stir to combine.
  4. Add chili powder, cumin, paprika, salt, and black pepper. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Serve hot and enjoy!
