Vegetarian Shepherd's Pie
A hearty and comforting vegetarian version of the classic shepherd's pie.

Main Ingredients
- 4 cups mashed potatoes prepared
- 1 tablespoon olive oil
- 1 cup onion chopped
- 2 cloves garlic minced
- 2 cups mixed vegetables frozen or fresh
- 1 cup vegetable broth
- 2 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon rosemary dried
- to taste salt and pepper
Preheat your oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add onions and garlic, cook until softened.
Add mixed vegetables, cook for another 5 minutes.
Stir in vegetable broth, tomato paste, thyme, and rosemary. Simmer for 10 minutes.
Season with salt and pepper to taste.
Transfer the vegetable mixture to a baking dish. Spread mashed potatoes evenly on top.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
Let it cool for a few minutes before serving.
