Ingredients 

Main Ingredients

  • 4 cups mashed potatoes prepared
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups mixed vegetables frozen or fresh
  • 1 cup vegetable broth
  • 2 tablespoon tomato paste
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic, cook until softened.
  3. Add mixed vegetables, cook for another 5 minutes.
  4. Stir in vegetable broth, tomato paste, thyme, and rosemary. Simmer for 10 minutes.
  5. Season with salt and pepper to taste.
  6. Transfer the vegetable mixture to a baking dish. Spread mashed potatoes evenly on top.
  7. Bake in the preheated oven for 20 minutes, or until the top is golden brown.
  8. Let it cool for a few minutes before serving.
