Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Black beans cooked
  • 1 cup Corn kernels fresh or frozen
  • 1 Red bell pepper diced
  • 1 Avocado sliced
  • 8 Small tortillas
  • 1 cup Shredded lettuce
  • ½ cup Salsa
  • ½ cup Sour cream
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add black beans, corn, and red bell pepper. Cook for 5-7 minutes.
  3. Stir in cumin, chili powder, and salt. Cook for another 2 minutes.
  4. Warm tortillas in a separate pan or microwave.
  5. Assemble tacos with bean mixture, avocado slices, shredded lettuce, salsa, and sour cream.
