Ingredients

  • 1 cup Shredded Carrots
  • 1 cup Shredded Cabbage
  • 1 cup Bell Peppers, thinly sliced
  • 4 pieces Spring Roll Wrappers
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a bowl, mix the shredded carrots, cabbage, and bell peppers.
  3. 3. Lay out the spring roll wrappers and place a small amount of the veggie mix in the center of each wrapper.
  4. 4. Roll the wrappers tightly and place them on a baking sheet.
  5. 5. Brush the rolls with olive oil and bake for 10 minutes or until golden brown.
  6. 6. Serve with soy sauce for dipping.
