Ingredients 

Main Ingredients

  • 4 leeks, white and light green parts only, cleaned and sliced
  • 2 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives for garnish

Instructions 

  1. In a large pot, melt butter over medium heat. Add leeks and onion, cook until soft.
  2. Add potatoes and broth. Bring to a boil, then simmer until potatoes are tender.
  3. Puree the soup in a blender until smooth.
  4. Stir in cream, season with salt and pepper. Chill in the fridge.
  5. Serve cold, garnished with chives.
