Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • ½ cup vodka
  • 1 can crushed tomatoes (28 oz)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • to taste salt and pepper
  • 2 tablespoon fresh basil, chopped

Instructions 

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and red pepper flakes, and cook for another minute.
  3. Pour in the vodka and let it simmer until reduced by half, about 5-7 minutes.
  4. Add the crushed tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Simmer for another 5 minutes.
  6. Remove from heat and stir in the chopped basil. Serve over your favorite pasta.
