West African Peanut Stew

Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Ginger, minced 1-inch piece
- 1 cup Tomato Sauce
- 1 cup Peanut Butter natural, unsweetened
- 4 cups Vegetable Broth
- 2 Sweet Potatoes, peeled and cubed medium
- 1 Red Bell Pepper, chopped
- 1 teaspoon Salt
- ¼ teaspoon Black Pepper
- ¼ teaspoon Cayenne Pepper optional
- 2 cups Kale, chopped
- ¼ cup Cilantro, chopped for garnish
Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes.
Add the garlic and ginger, and cook for another 2 minutes.
Stir in the tomato sauce and peanut butter, and cook for 5 minutes, stirring frequently.
Add the vegetable broth, sweet potatoes, red bell pepper, salt, black pepper, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.
Stir in the kale and cook for another 5 minutes, until wilted.
Serve hot, garnished with chopped cilantro.
