West African Peanut Stew

Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Ginger, minced 1-inch piece
  • 1 cup Tomato Sauce
  • 1 cup Peanut Butter natural, unsweetened
  • 4 cups Vegetable Broth
  • 2 Sweet Potatoes, peeled and cubed medium
  • 1 Red Bell Pepper, chopped
  • 1 teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Cayenne Pepper optional
  • 2 cups Kale, chopped
  • ¼ cup Cilantro, chopped for garnish

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Stir in the tomato sauce and peanut butter, and cook for 5 minutes, stirring frequently.
  4. Add the vegetable broth, sweet potatoes, red bell pepper, salt, black pepper, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.
  5. Stir in the kale and cook for another 5 minutes, until wilted.
  6. Serve hot, garnished with chopped cilantro.
