White Bean Chicken Chili

Ingredients 

Main Ingredients

  • 1 lb Chicken breast, diced
  • 2 cans White beans, drained and rinsed
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Chili powder
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Sour cream for serving
  • 1 cup Shredded cheese for serving
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced chicken and cook until browned.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the cumin, oregano, and chili powder. Cook for another minute.
  4. 4. Add the white beans, chicken broth, and corn. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Serve hot, topped with sour cream, shredded cheese, and chopped cilantro.
