Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 lb Chicken Breast, cooked and shredded
- 2 cans Great Northern Beans, drained and rinsed
- 1 can Corn, drained
- 2 cups Chicken Broth
- 1 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Chili Powder
- 1 cup Sour Cream
- ½ cup Heavy Cream
- to taste Salt and Pepper
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the shredded chicken, beans, corn, chicken broth, cumin, oregano, and chili powder. Stir to combine.
Bring the mixture to a simmer and cook for 20 minutes.
Stir in the sour cream and heavy cream. Cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
