Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 2 cans Great Northern Beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Chili Powder
  • 1 cup Sour Cream
  • ½ cup Heavy Cream
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the shredded chicken, beans, corn, chicken broth, cumin, oregano, and chili powder. Stir to combine.
  5. Bring the mixture to a simmer and cook for 20 minutes.
  6. Stir in the sour cream and heavy cream. Cook for another 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.
