Main Ingredients
- 1 lb chicken breast, diced
- 2 cans white beans, drained and rinsed
- 1 can green chilies, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 cup sour cream for serving
- 1 cup shredded cheese for serving
- 1 handful cilantro, chopped for garnish
1. In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the white beans, green chilies, chicken broth, cumin, oregano, and chili powder. Bring to a boil.
4. Reduce heat and simmer for 20 minutes, stirring occasionally.
5. Serve hot, topped with sour cream, shredded cheese, and chopped cilantro.
